Steak quesadillas

 


 

Steak Quesadillas. This recipe makes 8 quesadillas and should take about 30 minutes to prepare and cook. Please keep in mind that this is a rough outline and you may need to adjust the ingredients and cooking times to suit your specific needs.

Ingredients:

  • 1 pound flank steak
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon cumin
  • 1 cup diced onions
  • 1 cup diced bell peppers
  • 1 cup diced tomatoes
  • 1 cup shredded Monterey Jack cheese
  • 8 (10-inch) flour tortillas
  • Butter or olive oil for grilling the quesadillas
  • Salsa, sour cream, and chopped fresh cilantro for serving (optional)

Instructions:

  1. Preheat your grill to medium-high heat.
  2. Place the flank steak in a shallow dish and drizzle with the olive oil. Season the steak with the salt, pepper, garlic powder, chili powder, and cumin.
  3. Grill the steak for 4-5 minutes on each side, or until it is cooked to your desired level of doneness.
  4. Remove the steak from the grill and let it rest for 5 minutes. Thinly slice the steak against the grain.
  5. In a large skillet, cook the onions, bell peppers, and tomatoes over medium-high heat until they are soft, about 5 minutes.
  6. Lay a tortilla on a clean, dry surface. Place about 1/4 cup of the steak slices on one half of the tortilla. Top with about 1/4 cup of the onion mixture and 2 tablespoons of the shredded cheese. Fold the tortilla over the filling and press gently to seal.
  7. Heat a large skillet over medium heat. Add a little butter or olive oil to the pan and place the quesadilla in the skillet. Cook the quesadilla for 2-3 minutes on each side, or until it is crispy and the cheese is melted.
  8. Repeat the process with the remaining tortillas and filling.
  9. Cut the quesadillas into wedges and serve hot, with salsa, sour cream, and chopped fresh cilantro on the side if desired.
